I made delicious fishcakes i caught on the South coast this week. The recipe is very simple and it turns a bland white fish in to something that can feed the family.
You can watch the Catch and cook Video here .
I headed down to the Sovereign harbour Entrance in East Sussex, England to land a few small but keepable whiting.
Whiting are an easy catch
this time of the year. Bigger ones are definitely possible and on a recent live stream on my youtube channel we used 2/0 hooks and bigger squid and rag-worm baits to catch larger specimens around 1lb and this would've been ideal
.
However in this video i got all i needed to make something out of a rather dull and ordinary fish .
As you will see from the Video i'm no Jamie Oliver or Rick Stein ! However i do think that making something simple in a recipe makes things much more actionable.
No measurements please i'm a busy man !
tea spoon of;
Capers
Dijon Mustard
Horseradish Sauce
few potatoes par boiled
Cooked in milk and butter Whiting
Lob ( yes lob it that's they style here) in to a bowl and mix it up. It helps if the mixture is put in the fridge as i found it easier to shape in to those fish cake patties when cooled.
Then roll the mixture in to some bread crumbs and fry in olive oil in a pan till it looks a bit crispy and cooked through.
While filming this video it was tempting to go for all those arty ch4 production close ups maybe next time. For now id like to encourage you to give it a go.Keep it simple.
